Idli

- You can make idli as you always did. The one difference is, no need to greese the idli plates.

- A less time consuming alternative to making idli batter: Mix one measure of rice flour with two or three measures of idli rava. Mix with water to the consistency of pancake batter and soak overnight.

- Next morning you can make idli.

- You can also mix sooji (fine wheat rava) with yogurt. Let it stand for an hour or two and use this to make idli on short notice

- Fill the idli plate wells with the batter. Steam in a covered pan for 15 minutes.

- After the heat is turned off, let cool for a couple of minutes and then take the idlis out of the idli plates.

- Serve hot with the Idli Chutney or Coconut Chutney or Sambar.

Alternatives: Use Sooji instead of Rice rava. You can also try North-Indian dhokla or Puttu from Kerala. These will help you reduce your dependence on rice.
