Indian Spicy Bread / Rotte

- Finely grate one pound of onions, one pound of carrots, one pound of long squash. You can also add spinach.

- Add 10 or so grounded green chillies, 4-5 tbsp of roasted sesame seeds or peanuts - grounded, 20-30 chopped curry leaves, a cup of chopped coriander leaves, 1 tbsp of aam choor powder, 1/2 tsp salt to the grated vegetables

- You can also add a half cup of presoaked bengal gram / chana daal to the mix

- Mix all this with two cups of wheat flour or a "mixture of wheat and millet flour" and mix thoroughly

- You should be able to mix all this to the flour with the moisture from the grated vegetables alone. If need be use water very sparingly.

- Take a tennis ball sized ball of dough

- Take a plastic sheet or big zipper locker. Spread it on a flat cutting board and sprinkle some water on it. Now take the ball of dough and flatten into a 3-4 millimeter thick bread with your hand. Lift the cover and transfer the flattened dough onto your palm and then quickly transfer / spread in the pan

- Cover the pan with the lid and cook on one side. Take the lid off and flip and let it cook on the other side.

- Very yummy and your kids will love these in their lunch boxes.
