Yogurt Chutney (Raita)

1 cup yogurt
Half cup onions, finely chopped (or other vegetables. If using gourds such as snake gourd, you can cook them till soft).
Quarter cup diced tomatoes
Quarter cup chopped coriander leaves
2 green peppers – slit lengthwise

Mix all the ingredients and stir well. Goes well with Vegetable Biryani.

A few variations:
- Add a few chopped mint leaves
- Add some grounded sesame seeds
- Skip the onions. Cook half cup gourds till soft and add to the yogurt along with the other things.
- Add some chopped cucumber and carrots instead of onions
- Add some chopped cucumber and carrots along with the onions
