Gongura Pacchadi

I do not know what it is called in English and other languages. It is sour and incomparable. Gongura

Ingredients:
- Half pound Gongura leaves
- Half pound Onions – cut into large slices
- 10 – 15 green peppers – broken into two pieces to avoid splattering while roasting
- Quarter cup fresh coconut
- A quarter tsp of Salt (optional)

Preparation:
- In a dry pan, roast the onion slices, and green peppers until they turn brown. Alternatively, you can grill or bake the them.
- Put the leaves in a nonstick pan, add water, close the lid and cook until the leaves are soft and mushy.
- Grind all these coarsely in the food processor.

- Since gongura is hard to find, we truly miss it and use "spinach and lots of aam choor" as the alternative!
